Bistro Manuel, Poblacion

Bistro Manuel seems like a reincarnation of the late Lolo Dad’s; although the latter was irreplaceable.

Chilled roasted papaya and basil soup, sea urchin, squid and fish roe saffron foam


Seared scallops and duck foie gras, celeriac-potato puree and tomato fondue

Sorbet citrus

Sauteed shrimps, mussels and scallops pasta

US Wagyu center cut sirloin, hot pickled veal tongue and parmesan grits

Frozen mango cream pie, almond and dulce de leche

Declension of mango and mascarpone cheese





Lolo Dad’s taught me that the end is most certain. Life was never a promise. So do not wait to live. Seek wondrous things. Pursue the incredible certainty that comes with love.
